Honey Lime Chicken Enchiladas

This is a recipe that really gets around the internet... 
but these are the most delicious enchiladas I have ever made. 

I first made these about a year ago for my mom's birthday and I've easily made them 6 times since.  That's huge in our house.  We are pretty healthy eaters most of the time, so for me to make something like this over and over means it's beyond good.


1/3 cup honey
1/4 cup lime juice
1 Tablespoon chili powder
1/2 teaspoon garlic powder
1 pound chicken, cooked and shredded
I small can fire roasted green chilies
½ cup salsa verde
8-10 flour tortillas
2 cups monterey jack cheese, shredded
2 cups green enchilada sauce
1/2 cup half and half
Marinade cooked, shredded chicken in honey, lime, chili powder & garlic for 30 minutes.
After chicken has marinated, combine with 
green chilies, salsa verde and 1 cup of cheese.

Pour enough enchilada sauce on the bottom of your baking dish to create a thin layer on the bottom. Fill flour tortillas with chicken mixture.  
Place rolled tortillas seam side down in baking dish.

Combine remaining enchilada sauce with half and half.  Pour over enchiladas.  
Sprinkle remaining cheese on top.
Bake at 350 for 30 minutes.  Serve with jalapeno hot sauce.
