Christmas Around the House

The primary holiday decoration in our house is courtesy of the big tree and the little tree.  
I really don't go all out, but I do create little vignettes around the house to 
add sprinkles of Christmas cheer.

Pine Fresh


Keepin' it real in the room with the fake tree.
One year I shoved a pine-scented car air-freshener deep within the plastic boughs ...
This is significantly classier.

Seven Layer Bars

This is a dessert for someone with a serious sweet-tooth ... they are so over the top in the sweet department, but they are yummy (and Eric's favorite).  
This recipe came from Eric's aunt, but there are similar recipes all over the web too.


1 stick butter
1 ½ cups graham cracker crumbs
1 cup semi-sweet chocolate chips
1 cup white chocolate chips
1 cup butterscotch chips
½ cup chopped walnuts
1 can sweetened condensed milk (14 oz)
1 cup shredded coconut

Place butter in 13 x 9” pan and melt in oven. Swirl to coat bottom and sides with butter. Spread crumbs evenly over bottom of pan. Layer chocolate chips, butterscotch chips, and nuts over crumbs. Pour condensed milk over nuts. Sprinkle coconut over condensed milk.
Bake @ 350 for 25 minutes.  Cool completely before cutting into squares.

It took me 2 episodes to get hooked on this new show.  Super cute Zooey Dechenal is hysterical and it’s nice to mix up my usual reality-show favorites with an actual scripted comedy.  It's laugh-out-loud by yourself funny.

 
If ever there was a polish that screamed holiday, it’s this color.

Speaking of Wine-ey…
Red Bicyclette Pinot Noir.  The best cheapie red I have ever found. 
We stock up this time of year for excessive merry-making.

Super awesome product.  You mist it on your freshly made-up face and you’re free to party the night away without ever needing a touch up.  Magic.


Eric

Eric is hooked, and it’s a deep love.  He can’t get enough of the iPad 2, especially for reading. NOOK & Amazon Aps = awesome.

As the kid who is allergic to most holiday sweet and treats, he looks forward to a jumbo pack of candy canes every year.  They have to be the original red & white peppermint variety though, none of the crazy flavors and weird colors at our house. 

It’s football season.  ‘Nuff said.
You can find Eric and Elwood planted on the couch every Sunday rooting for the home team (aka excessive screaming followed by excessive napping).  Toss in a plate of nachos and he might ignore me for a good 6 hours.

It takes him weeks to eat one and he loves ‘em.

SÖT BARNSLIG (Mini Ikea Toys)

These pint sized plush toys are perfect for The Woo to drag all over the house.  
The best part is they are super cheap ($0.49)  
 I just throw them away when they get groody and toss him a new one.

When it’s too cold for long walks in the woods, it’s too cold for a bath. The Woo stays fresh with a quick wipe down with Earthbath wipes.  Squeaky clean goodness.

Ribollita

We were up at the crack of dark this morning to participate in Waly Warmth (my 7th year!)
On the way home, we decided Ribollita was in order.  
It's a super yummy Tuscan soup that tastes best on a freezing-cold winter day.

My recipe is adapted from this one.  
It makes a ton of soup... at least 8 servings.



2 cans cannellini beans (15 oz), drained
2 T olive oil
1/2 lb diced pancetta (I often skip this to make it vegetarian)
2 cups chopped yellow onions (2 onions)
1 cup chopped carrots (3 carrots)
1 cup chopped celery (3 stalks)
3 tablespoons minced garlic (6 cloves)
2 cups dry white wine
1 (28-ounce) can Italian plum tomatoes in puree, chopped
4 cups coarsely chopped kale
1/2 cup chopped fresh basil leaves
6 cups chicken stock (or veggie stock)
4 cups sourdough bread cubes
Salt/pepper
freshly grated Parmesan, for serving

Heat the oil in a large stockpot over medium heat Add the pancetta and onions and cook over medium heat for 7 to 10 minutes, until the onions are translucent. Add the carrots, celery, garlic, salt & pepper. Cook over medium-low heat for 7 to 10 minutes, until the vegetables are tender. Deglaze with 2 cups dry white wine. Add the tomatoes with their puree, the kale, and basil and cook over medium-low heat, stirring occasionally, for another 7 to 10 minutes.
In a food processor or blender, puree the 2nd can of beans with 1/2 cup stock. Add to the soup along with the remaining whole beans. Add stock and bring to a boil. Reduce the heat and simmer over low heat for 20 minutes.
Add the bread to the soup and simmer for 10 more minutes. 
Taste for seasoning and serve hot  sprinkled with Parmesan.
