Mixed Tape

This time of year I'm usually up to my eyeballs in playlists for dance classes...

But I do occasionally make myself a playlist of things I like to listen to too.

This one is perfect for me hunker down at the computer, zone out, and

get some design work done.

Honey Lime Chicken Enchiladas

This is a recipe that really gets around the internet... 

but these are the most delicious enchiladas I have ever made. 

I first made these about a year ago for my mom's birthday and I've easily made them 6 times since.  That's huge in our house.  We are pretty healthy eaters most of the time, so for me to make something like this over and over means it's beyond good.

1/3 cup honey

1/4 cup lime juice

1 Tablespoon chili powder

1/2 teaspoon garlic powder

1 pound chicken, cooked and shredded

I small can fire roasted green chilies

½ cup salsa verde
8-10 flour tortillas

2 cups monterey jack cheese, shredded

2 cups green enchilada sauce

1/2 cup half and half

Marinade cooked, shredded chicken in honey, lime, chili powder & garlic for 30 minutes.

After chicken has marinated, combine with 

green chilies, salsa verde and 1 cup of cheese.

Pour enough enchilada sauce on the bottom of your baking dish to create a thin layer on the bottom. Fill flour tortillas with chicken mixture.  

Place rolled tortillas seam side down in baking dish.

Combine remaining enchilada sauce with half and half.  Pour over enchiladas.  

Sprinkle remaining cheese on top.

Bake at 350 for 30 minutes.  Serve with jalapeno hot sauce.

Project... where the heck is Tim Gunn?

It's no secret that I am a huge fan of Project Runway.  

I totally called this past season and was almost 100% right for like the first time ever!

So with all of this Project love, you'd think I'd really like the new Project Accessory too ...

Yeah, not so much.  For the life of me, I can not stay interested in that show long enough to care about who went home.  I just need my Tim Gunn in shows that include a runway.

I also thing that Kenneth Cole needs to either take 'one-liner' lessons from Michael Kors,

or shotgun a Red Bull before the Runway.  Snooze-fest.

I'm calling this a big-spin-off-fail.  wopwop.

I am, however, over the moon excited about

Project Runway All Stars.

Hooray!

Fall Salad with Apple Dressing

I made this fall salad for our recent trip to Philly.

We eat salads like this all the time, but it was a hit with the party crowd!

Salad:

Artisan Lettuce

Craisins

Pumpkin Spiced Almond (chopped)

Stilton Cheese with Cranberries

Dressing:

Olive Oil

Apple Cider Vinegar

Apple Cider

Dijon Mustard

Sugar

Salt & Pepper

There isn't really a method to putting this together.

Add as much of each 'topping' as you like.

For the dressing, I use 1 part vinegar to 2 parts olive oil.

I add a splash of apple cider, a dollop of mustard, 

a sprinkle of sugar and lots of salt & pepper.

I really just keep dipping lettuce leaves in the dressing as I make it and adjust it as I go!

Also, I always make my dressing in a mason jar ... we like it shaken, not stirred.

Also, I don't understand how anyone can possible chop nuts without one of these chopper thingys.  My bestie lives without one... I don't think I could cook without one!

Yeah, it's lazy, but MAN is it fast.

Old Navy Clean Sweep

On our way home from Philadelphia, we dropped by the King of Prussia Mall to hit 

H&M, Urban Outfitters and American Apparel.

(all the basics that our wardrobes are made up of -- none of which we have at home. grr.)

On a whim, we also popped in Old Navy 

(even though we DO actually have this at home, ha)

 Well, THANK goodness we did, because their Halloween stuff was on super sale.

Like $0.49 for doggie costumes all in size XS.

It's a good thing the Woo-Man likes to dress up!

'Tis the Season

I am a huge sucker for seasonal-flavored items.

Between October 1st and Thanksgiving, if it is:

Pumpkin, Apple, Spice, or Cranberry flavored... I must have it.

Coffee, lip gloss, gelato, whatever!

Favorites include:

After starting the day after Thanksgiving through New Years Day, if it is:

Peppermint, hazelnut, toffee, or eggnog (sometimes), you can bet I'll buy whatever it is!

I love these tasty seasons :)

Then I basically just shrivel up and cry because it's too cold to enjoy anything during a 

Pennsylvania winter past January 1st! 

DF Design Project

The dance studio is gearing up for the annual holiday showcase.  
This year the theme is 'Celebrate Winter!'.
